He has been told the roses are picked before sunrise, so he sets his alarm for four. The first thing he meets in the dark is not rose at all but cassis: a sharp, tart, green-fruited brightness, blackcurrant buds crushed underfoot on the way down to the field. Then geranium, minty and rosy, the leaf before the flower, on the hands of the woman who shows him how to twist the bloom from the stem without bruising it. By six the sacks are full and the sun is high enough to matter. It is only then, walking back with the harvest on his shoulder, that the rose itself arrives: Isparta absolute, honeyed, deep, almost spiced, the whole valley concentrated into something the size of a whisper. He realises he has not said a word all morning. Nobody seems to have noticed.
