Imagine a spice merchant's counter at the end of the day. The opening is aromatic and warm, with a herbal edge that keeps the sweetness from arriving too early. Then the edible heart, dark and rounded, with a toasted, almost boozy sweetness. It is a gourmand that grew up, less pastry than spirit. In the dry-down the woods take charge, dry, resinous and faintly smoky, holding the herbs and the sweetness in a slow, even glow that lasts for hours. It is the kind of scent people lean in to identify, and then lean in again.
