The recipe said one lemon; she used the whole bag and told nobody.
A kitchen table in the sun, a bowl of citrus, a sheet of pastry cooling. The opening is squeezed fruit with a sugared edge, citrus sweetened rather than sharp, the smell of zest rubbed into sugar. The heart is white flower, creamy and bright at once. The dry-down turns edible, a soft, cake-like sweetness, the sort of warmth that lingers on cuffs and hair. The tart is gone before it has fully cooled. She writes the real recipe on the back of an envelope and hides it in the drawer.
