The first infusion is thrown away, and that is the only part anyone argues about.
The kettle, the tray, the small clay pot, the cups no bigger than a thumb. Gongfu means skill, or effort, and the ceremony rewards patience over ceremony. The opening is Italian lemon and red lemongrass from Madagascar: a bright, slightly grassy citrus that is the rinse of the cups, the cleansing of the pot, everything that happens before the tea. Then the black tea accord in the heart, and it is properly black: malty, tannic, a little dried fruit, a little honey, the smell that rises from the pot after the second pour when the leaves have opened. In the base, cedarwood, dry and pencil-clean, keeps the composition sober and slightly masculine, the wooden tray on which the whole thing rests. The host pours a fourth infusion. Nobody has spoken for several minutes, and nobody minds.
