The peony opens on the same morning the tea is whisked, and only one of them lasts.
The bowl is warm in both hands and the foam on the matcha is fine and pale, the colour of new leaves. Beside it, in a low vase, a single peony has opened overnight. The opening is sweet orange, a brightness that clears the way. Then the heart: a peony accord, rosy and dewy, faintly fruity, the flower at its most open, laid over a matcha accord that is vegetal, creamy and a little bitter, the stone-ground tea just as the whisk stops. The pairing is a small argument between sweetness and astringency that neither side wins. In the base, patchouli oil from Madagascar gives it earth: green rather than dark, damp rather than dusty, the soil the peony came out of. By evening the petals have begun to fall. You drink the last of the bowl, and do not clear them away.
