The picker's basket is barely a third full, because the buds of the first flush are small and the light is short. Longwu, on the far side of the hills from West Lake, wakes early in April. The opening is Longjing as it truly is, a Vitessence capture of the leaf: flat, pan-fired, chestnut-sweet, with a grassy edge that only the pre-Qingming pick has. In the heart a mung bean accord takes over, starchy, cool and faintly milky, the taste of the sweet soup sold on the road down from the gardens. It is an unexpected softness, a comfort note in a fragrance that could have stayed austere. The dry-down is guaiac wood, smoky and rosy, like the pan the leaves were fired in an hour after the fire has gone out. He pours a second cup, and says nothing about the price.
