The flowers are picked before they open, and the tea is never told.
In Fuzhou the jasmine harvest happens in the afternoon heat, when the buds are tight and white and still closed. They will open at night, in the dark, laid over green tea in layers, and give the leaf everything they have. The opening is Egyptian jasmine absolute, Coeur de Saison, the heart of the harvest, rich and fruity and slightly indolic, the smell of the buds as they begin to loosen. In the heart, a second jasmine, an artisan sambac absolute, greener and more tea-like, sharper at the edges, closer to the flower still on the vine. Beneath both, watery notes: not marine, not ozone, but the clear, faintly sweet smell of hot water poured into a bowl in a quiet room. Steam lifts. You lean over the cup, and the room fills with night.
