The story

The first cup of the morning tastes of the sea, and you cannot say why.

You are in Uji before the shops open, and someone has already put the kettle on. The opening is sencha itself, captured as it is drunk: steamed leaf, bright and slightly sweet, with the vegetal snap of a freshly opened tin. Vitessence keeps it honest, close to the cup rather than to a memory of one. Then the room turns. A seaweed accord rises through the steam, salt and iodine and the smell of wet stone, and the tea becomes a shoreline. You think of the Uji river, of the mist that shelters the tea gardens, of the sea somewhere beyond the hills. The dry-down is green mandarin from Madagascar, expressed cold, zesty and faintly bitter, keeping the whole thing lifted long after the cup is empty. Someone opens a door. You do not know who.
