The ice has melted before you notice, and the tea is better for it.
It is the kind of heat in which nobody moves quickly. A glass of cold-brewed sencha sits sweating on the table, and someone has squeezed a lime into it, because that is what the season allows. The opening is lime essence, sharp and green and unmistakably fresh, more skin than juice. The green tea accord in the heart is the cold cup itself, umami and slightly astringent, with the steamed-spinach depth of a good Japanese leaf rather than the dry hay of a Chinese one. Then the lemongrass, a red Madagascan oil, warms through the base: lemony, herbaceous, a little rosy, and more persistent than you expect from something so light. The afternoon stretches. You had meant to go somewhere. You reach for the glass again, and decide the somewhere can wait until the heat breaks.
